Apple Tart
Serves 6
Ingredients
* 4 cooking apples, peeled, sliced thinly
* 2 tbsp sugar (or 1 tbsp “agave nectar” for diabetics)
* ˝ tsp cinnamon
* Juice of 1 lemon
* 350g/ 12 oz shortcrust pastry
* Milk and sugar, to glaze
Method:
1. Place the apples in a microwave bowl with the sugar (or agave),
cinnamon and lemon juice. Cover tightly and cook for about 5 minutes
until softened but still a little firm
2. Drain over a sieve and cool
3. Roll out the pastry to fit a shallow tart tin (approx 23cm/9in), fill
with the apples then roll out another piece of pastry to cover
4. Seal the edges, then paint the surface with some milk. Sprinkle with
a little sugar (but not if cooking for diabetics). Slash 2 holes in the
top for the steam to escape.
5. Bake in an oven preheated to 190 C/ 375 F/ Gas 5 for
35-40minutes or until the pastry is golden
