Oatmeal
Raisin Cookies
1 Cup Dark Brown Sugar
½ tsp. Salt
1 Cup Sugar
1 tsp. Baking Powder
1 Cup Veg. Oil.
½ tsp. Baking Soda
2 Eggs.
1 ½ Cups ground Oatmeal
2 Cups Flour
8 – 10 oz. Raisins (add more or less as needed)
1 tsp. Vanilla
Nuts optional.
Cream Sugar & Oil, add eggs and beat well.
Add Salt, Baking Powder, Baking soda and vanilla.
Add Flour, Oatmeal, Raisins and Nuts.
Combine all ingredients.
Put dough in fridge for at least an hour
Using small ice cream scoop, mold small golf ball size pieces of the
dough and put on
ungreased cookie sheet – 2” apart.
Bake 400 degrees for 10-12 mins.
*** You can substitute the Raisins for Choc. Chips and make Choc. Chip
Oatmeal Cookies.
